You won’t be able to:

• Use Google Assistant or device-wide voice commands

• Use push notifications for some Google-dependent apps (unless Google Services are installed)

• Link your phone to proprietary Google ecosystems like smart homes or Android Auto — unless you re-enable those parts

But for most users, daily functionality like messaging, maps, browsing, and email works great — without the surveillance.
